Nitrates are a common contaminant in drinking water, particularly in areas of agricultural production. Nitrates leached into water from dairy farming has increased significantly in the last few decades. Studies have found that nitrates in the drinking water can produce health issues for humans, including preterm births and cancers of the colon and rectum. Parts of Canterbury, Southland, Nelson/Tasman and Wairarapa have the highest rates of colorectal cancer in the country, and NZ has one of the highest rates in the world of this type of cancer.
